You say cookies have nothing to do with camping? We disagree! Think camping snacks. These cookies have been coming camping with us for as long as we can remember. I originally found the recipe from allrecipes.com and with a few small modifications it was an instant hit. I always make a few dozen before camping and store them in a disposable container.
Oatmeal Peanut Butter Cookies - lightly adapted from allrecipes
Makes 48 cookies
1/2 cup butter flavored shortening
1/2 cup butter (room temperature)
1 cup packed light brown sugar
3/4 cup white sugar
1 cup peanut butter (we prefer crunchy or extra crunchy)
1 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 cup quick-cooking oats
- Preheat oven to 350 degrees
- Combine shortening, butter, brown sugar, white sugar, and peanut butter until smooth. Add eggs one at a time until well blended. In separate bowl combine the flour, baking soda, and salt - then combine both bowls together. Fold in the oats. Use a small ice cream scoop to drop dough onto ungreased cookie sheets.
- Bake for 10 to 12 minutes until just light brown. Be sure not to overcook.
